Should I buy Knives or pans?
I have 300-400 dollars to spend should I get a decent set of pans or knives? Right now I have a mixed set of pans that were hand me downs, a Dutch Oven, a Cast Iron skillet, and nonstick utility pans (omelet and wok), and a set of 4 knives that were about 30 bucks, they keep a fair edge when honed but are a little flimsy. I was planning to buy either a set of calphalon tri ply pans for about 325 online or a set of knives which I know less about.
Basically what I'm asking is a decent set of pans or a decent set of knives, (or should I buy the knives individually?)? Also if you think I should get knives which brand should I get?
I would start with the pans. calphalon is nice but it can be stained. As far as the Knives you really have to go and handle them on an individual basis for feel as everyones hands are different and you need to see how they balance in your hand. Make sure that if they are not 1 peice knives that the tang runs the whole length of the knife. As for the pans, in most restaurants they use stainless as they are easier to clean. Good luck.

My friend, Mark, is about to open his new restaurant two weeks from now, and he hasn't decided where to buy kitchen equipment. But one of the most important but overlooked factor would be the equipment. I'm glad I was able to help in this part of the planning.
The equipment is very important in a restaurant. Without it, where would you store the food, or how would you cut meat, how would you serve it, and basically, how would you cook it. It is important to have durable and high quality tools and equipment to make sure that the cooking process in the kitchen runs efficiently.
