Baked apples! Core them, fill them with mixed dried fruits and soft brown sugar and bake them in the oven. What would a French guy know about this - even if he is a famous chef?
Well, I am Canadian, but prefer the Australian Granny Smith, for baking, sauces even cored and stuffed with all those tasty goodies. This is my opinion, the Granny Smith holds it's texture well, adds a good apple flavor.
I core, peel and halve 3 Granny Smith apples, add them to my Baking Dish when I am baking pork hocks. Once the Hocks are done, I drain off the excess oil and leaves me with the juices, mash and mix the apple with the juices, and use as a sauce. The flavor is outstanding.
