What's a good kitchen/chef knife to buy?
I wanna get a decent knife, with a budget of 80-140 dollars. I'm thinking about cutco, but I have problems trusting a company that sells potato peelers for $50.
You're right about Cutco. Stay away. Their knives, despite their claims are mediocre at best and price/performance ration is just horrible.
Their marketing is one of the most misleading and lots of their claims are far from the truth, starting with 440A steel they use which ic the worst in 440 group of steels(A, B, C).
As for the good kitchen knife, there's quite a few out there.
For starters, you can safely ignore the same marketing BS every knife salesman will try tell you " good kitchen knives must be forged, have Full Tang and bolster".. It's all unnecessary and the best Japanese and custom kitchen knives I have or handled, never had a bolster or full tang. Stamped Globals outcut forged western counterparts any time, and they're not the best knives either.
If you like particular a particular knife with a bolster or full tang, nothing wrong with it, but don't pass on the knife because it doesn't have them, or don't make a decision based just on presence of those things.
Same goes for the "heavy knife does cutting for you" myth. It's elementary physics and very easy to show that knife weight doesn't give any significant advantage in terms of cutting efficiency compared to edge sharpness levels. You might get repeated stress injury in your shoulder because of heavy knife, or just tired..

I guess since yo know your budget, you have to pick Japanese vs. Western style knives.
I don't mean blade geometry, Japanese chef's knife - Gyuto is somewhere between German and French chef's knives, some are more like German, others more towards the french.
In short Japanese knives are thinner, lighter and made of harder metal, 58-62HRC on low/mid range and 62-67HRC on high end stuff, while western knives are 54-56HRC typically.
Harder blade means the knife will stay sharp longer and also you can grind thinner edge on it. Which means much better cutting performance. Western knives have 45-50 deg. angle on them as usual and Japanese are 30deg and below.
Because the edge is thinner on Japanese knives they require more care, as in don't whack lobsters with your chefs knife and don't use it as a screwdriver kind of care.
As for the brands, there's quite a few good ones from either school. Besides Wusthof and Henckels, Messermeister and Chef's Choice are very good.
For Japanese Tojiro, Hiromoto, Togiharu, Aritsugu and many others.
