I have a cabin and started last week, every day excellent results every time. Mine had several scratches preseasoning but it seems to disappear quickly (I spray a little Pam iron before use.) I have a Imperial Commercial stove with a large griddle, what type of grease should i use on the griddle?
I am using regular vegetable oil and it leaves a burnt taste on grill cheese sandwiches ect. I am an experienced home cook but have never cooked on a commercial griddle before, any suggestions as to what I need to do??? Thank you.
Oil is fine as a chef we used a product called Prep, a veg oil based cooking medium with a butter flavour, try keeping the heat down to 350 F or 175 C, and clean it with a griddle brick every so often.
