Do Henckels Eversharp knives really keep their edge for a while?
I recently bought a set of Henckels Eversharp knives and adore them. I've only been using them for two weeks but have been very pleased with them so far. The box claims that they "never need sharpening."Now obviously all knives are going to need sharpening at some point, it's just a matter of how soon.
The reason I was wondering is because my mother has a set of Henckels knives (not the Eversharp) that were given to her by my aunt. They are extremely dull, probably one of the dullest sets of knives I've used. Granted, she's had them a while and they're used constantly, but even after they've been sharpened it lasts about a day or two and then it's back to dull. Her set is a top of the line one and was very expensive. Mine on the other hand were pretty inexpensive.
Has anyone had any personal experience with this particular set of knives?
knives will go dull, even those very expensive ceramic ones will need to be sharpened by a professional every year depending on use.
yes i also have a set of henckels carbon 5 star knives which is very expensive. to sharpen the knives you cannot really use the normal honing steel because you need the diamond fiber honing steel and a Sharpening Stone. carbon knives can be difficult to take care off for amateur cooks because it needs a lot of care and attention and proper experience. so far my knives is already 10 years old and looks almost new. i use it everyday and resharpen it every week with a sharpening stone and use the honing steel a few times a day (2-3 strokes every time).
in your moms case, she needs to send the knives to a professional to resharpen the edge. (just send to a knife store most of them will do it for you for a small fee)
