Satisfying Entree in Minutes:Pan Cooked Salmon with Beans and Spinach Saute
It really is easy to have dinner on the table quickly. Skip the fast food and make these entrees for your family instead. Pan Cooked Salmon with Beans and Spinach Saute is ready in minutes giving you fish, spinach, and beans in no time at all. This is much healthier than a bag or box of fast food could ever be and you will feel better about what you are feeding your family.
PAN COOKED SALMON with BEANS-SPINACH SAUTE
3/4 cup chopped onion
1 tbsp minced garlic
2 tsp sage
2 tsp canola oil
1 can (cannellini beans, rinsed and drained)
1/2 cup chicken broth
1/4 tsp salt, optional
3 cups baby spinach
4 (about 3-oz each) skinless salmon fillets
red pepper flakes, optional
In a deep wide skillet, heat half the canola oil. Add the onion, garlic, and 1 1/2 teaspoons of the sage. Cover the pan and cook over medium heat, stirring often, for approximately 5 minutes until the onion starts to soften. Add the beans, broth, and salt,if using. Simmer mixture approximately 10 minutes. Stir the spinach into the beans mixture and cook another 2 to 3 more minutes. Remove from heat.
Rub the salmon with the remaining 1/2 teaspoon sage. Heat the remaining half of the oil in a skillet. Place salmon fillets in the skillet and cook 3 to 4 minutes. Carefully turn the salmon and cook another minute. Remove to Serving Plates and spoon the spinach-bean mixture evenly over each fillet. Sprinkle with red pepper flakes, if desired.

What is the purpose of cooking on a Grill Pan?
On cooking shows, I have often seen them use stove-top grill pans to cook meat. I have never used one and wonder what the purpose of them is. Is it just to give the finished product the pretty grill marks, purely aesthetic, or is there some other reason they are so popular? Also, can they be used on any type of range - gas, electric, glass-top?
A grill pan, of which there are many brands on the market, is a type of Frying Pan with raised ridges that is meant to simulate grilling on a rack in the great outdoors. It doesn’t really succeed, but with its ridges, is able to create a pattern on your food as if it had been grilled. The reason it doesn’t succeed is that the food does not come in contact with the flame or even particularly high temperatures, and so does not approach the intensity of flavor we look for in grilled foods.
Most manufacturers recommend you cook on their grill pans at medium heat, to take care of the pan and to minimize smoking and spattering. Burt Wolf, author of The New Cooks' Catalogue: The Definitive Guide to Cooking Equipment (Canada, UK), says he has found that grill pans work well for firm vegetables, shrimp, pork chops, hamburgers, hot dogs, oily fish and thin steaks. With thick steaks, the outside is too often overdone before the center is cooked.
The grill pan does not care what your source of heat is — either gas or electric will work equally well.

Low Fat Cooking Tips and Low Fat Recipes for Weight Loss by Angelia
Low fat diet is very common and popular nowadays, people who are more health conscious choose to go for low fat diet to reduce or control the amount of saturated fat in their meals. Most of the people aware that diet with high content of fat especially saturated fat will lead to cardiovascular diseases, high blood cholesterol and etc.
Here I would like to share a few tips that would help you to simply reduce the fat content of most of your dishes and still taste delicious. Many recipes recommend to use butter or oil to sauté vegetables, and to consider a low fat diet, oil should be used instead of butter to lower the saturated fat content of the dish. It would be better if you have low fat or nonfat cooking oil as a substitute. You could also sprinkle a little salt on the vegetables to bring out their natural juices, so that less oil will be needed. Using a nonstick frying pan is also a good idea of reducing the amount of oil used during frying.
One of the very common substitutions for butter in low fat diet is margarine, but there is an important consideration you have to make before switching from butter to margarine. If you were to prepare a dessert, then it is usually best to use butter, as margarine may significantly change the taste or consistency of the desserts.
Many chesses and other dairy products namely sour cream, milk, cream are sources of unwanted fat. While apply cheese to your dishes, you may consider cheese with reduced fat or nonfat varieties, or simply reduce the amount of cheese by replacing it with a stronger tasting type. Another common way of trimming fat from a dish is to use skim milk in substitution of cream. If a recipe that call for sour cream, you may try to substitute it with nonfat or low fat sour cream, or just plain yogurt.
Below is a very delicious and healthy low fat vegetarian recipe, Stuffed Tomatoes with Feta Cheese:
Ingredients: (4 servings)
4 medium sized ripe tomatoes
2 tablespoon finely chopped fresh parsley
2 tablespoon finely chopped scallions
3 oz finely crumbled feta cheese
¼ bread crumbs
3 tablespoon olive oil
Method:
1.Carefully cut tops off tomatoes, using a spoon to carefully scoop out pulp and seed. Save pulp and discard the seeds.
2.Coarsely chop the tomato pulp.
3.Preheat oven to 350F.
4.In a small bowl, combine tomato pulp with scallions, parsley, feta cheese, bread crumbs and olive oil.
5.Spoon mixture into the hollowed-out tomatoes. Place tomatoes right side up in a 8-inch by 8-inch Baking Pan and bake for 15 minutes.
6.Serve stuffed tomatoes steaming hot.
