What Are Dry Aged Steaks

The perfect steaks by mail have been the subject of much talk and even greater debate.  Steaks online in general have only become popular over the past few years.  Although those that purchase dry aged steaks as well as other types of meats through this method, believe it’s the only way to shop.  And after you speak or read reviews about purchasing steaks by mail you sometimes wonder why you ever leave your home to go to the butcher or supermarket at all.

Of course, regarding dry aged steaks as well as many others, there is the debate over grain fed versus grass fed cattle.  Then cooking techniques cause uproar amongst experts as well as what beef is better; Kobe beef or Black Angus?  Even though this can all be argued, experts in buying steaks online or at the local butcher agree on one thing.  The difference between a steak that is edible, is really good and is amazing is how properly the steaks by mail were aged.  And if you are a beef and steak lover you probably know that and are willing to do whatever it takes to make sure your steak dinner is all you expect it to be.

Dry aged steaks are a type of aging that is very carefully monitored.  Only the most climate controlled environment and aging for the perfect amount of time is allowed when you are purchasing this type of steak from a company that sells steaks by mail. 

Dry aged steaks can take many weeks for the breakdown of muscle fibers which causes the beef to be exceptionally tender with a very strong beef flavor.  Also, the texture is next to none which makes these steaks the most wanted by true quality beef lovers. 

Although this steak gets high points in all categories, it may be a big higher in price because the dry aged steak process takes much more time.  Also, over the course of time, the steak loses some of its weight and after it’s trimmed, there is a smaller portion left. 

Whether you by steaks by mail or at your local butcher or supermarket, you really should discover the different types of steaks you can purchase with dry aged steaks being on the top of the list.  They are delicious, tender and always such an enjoyable piece of beef to eat.

broiled King Salmon tastes bitter?

I broiled/baked a king salmon filet with a few dashes of seasonings on it, then added lemon and salt when it was done to perfection. Instead of tasting sweet, it has a bitter flavor that piques the back and back sides of my tongue. The salt and lemon offset this, but I thought this an unusual flavor phenomenon. Any ideas?
the seasoning was Cavenaugh's. I squeezed fresh lemon juice onto the fish. The most bitter was a piece of flesh without salt or lemon-- and the lemon was sweet compared to the salmon--yes the bitterness was like the water that had a lemon rind soaking in it overight--no, it was more bitter--and hot-bitter, at that.

I would guess it's the lemon. It can have a bittering effect if cooked too long. Try adding the lemon at the end of the broil or after cooking.

Even though you taste some lemon which helped the taste, too much of it may have bittered if there wasn't enough moisture in the dish.

That's my best estimation.
