Stainless Steel Roaster Pans
Many Folks tend to utilize roasting pans on the holidays and the popular agreement is your Thanksgiving turkey dinners and Christmas ham are usually best when roasted in the oven. You can prefer chicken and rump roasts as well when roasted. Here are some pointers for those special dinners.
Tips for Roasting

Center the roasting pan in the middle of the cooker keeping an identical quantity of space between the top of the pan and the bottom as well as the sides. As the meal cooks, try turning the beef 1 time in the pan to stop burning. Veg may be stirred across the process. Always check temperature of the beef or poultry.
Slow roasting is best achieved with an electrical roasting pan, typically called a slow cooker. You need to slow roast your meals for tender luscious meats. Having a rack to hold the meat or birds above the juice will permit proper browning underneath and make serving simpler. Any pan with handles is also an advantage for heavy meals.
Pan Types
The best pans for roasting are extreme heat conductive copper, stainless steel, Cast Iron, aluminum, Carbon Steel, porcelain, and enamel on steel. Copper roasting pans, if cared correctly, for will last a life-time. Ceramic or Clay pans are also great for roasting and making big casserole dishes.
Using a covered roasting pan will seal in the flavor of meats and helps keep juices from overflowing.
Pan Size
You should always commence with the correct sized roasting pan for the job. There should be no more than an inch of space from the interior pan edge to the food. If the roasting pan is too large your meal will cook irregularly leaving meats burnt and dry and juices in the pan will burn. If the roasting pan is too small your meal will steam rather than roasting, and uneven browning will happen as well as spillage into the stove.

How to Cook a turkey on a roasting pan?
I have a Ge roasting pan. I want to cook the turkey in this roasting pan. It does have racking tray. Do i use this? Do i add water on the bottom of the tray? Its an 18 quart roasting pan. Give me details on your turkey on your roasting pan any ideas!!
My sister and I cook our turkeys like this all of the time. We do use the rack, basically so the bird won't stick to the bottom. We don't use water in the bottom, because the drippings will fall into the pan.
Here's our method:
1. Wash and dry the turkey. Be sure to rinse the inside cavity!
2. Rub outside of turkey with butter or margarine.
3. Take pats of butter (or cloves of garlic) and put under the skin on top of the breast. This will give the breast a little extra moisture and seasoning.
4. Sprinkle poultry seasoning (you'll find it in the spice section) all over the turkey. You can use garlic, salt, pepper, or any other seasoning you prefer.
5. Place turkey in the roaster. We prefer breast up.
6. Turn roaster on 400 for about an hour, then reduce to 250 and let it cook all night.
We generally start our turkey on Wednesday night about 11 PM and use this method so we can eat at about 1 PM on Thursday. We will check on the bird throughout the morning, and adjust the heat if the bird doesn't seem to be progressing on time. We don't use foil, and we have a unit that connects into the lid of the roaster with a fan. This will help the bird cook more evenly. It doesn't come with the oven, so you may have to check around for it. If you don't have one, don't worry. I've cooked several turkeys without one, and they come out fine.
