Sweet Pepper and Calamari
THE CONFIT
* 1/2 cup olive oil (not extra-virgin)
* 20 baby sweet red peppers, whole
* 3 large cloves garlic, peeled and halved lengthwise
* 1shallot, peeled and cut into 1/4-inch-thick slices
* 3 branches fresh thyme
* Pinch cayenne
* Fine sea salt, to taste
THE CALAMARI
* 1 tablespoon olive oil (not extra-virgin)
* 1/2 pound cleaned baby squid, bodies only, skinned and cut across into
* 1/4-inch-wide slices
* Fine sea salt, to taste
* Freshly ground white pepper, to taste
* Cayenne, to taste
* 1 small clove garlic, peeled and finely diced
* 2 tablespoons chopped fresh Italian parsley
* 2 teaspoons fresh lemon juice
* 2 teaspoons balsamic vinegar
For the confit, at least 1 day before serving, Sweet Pepper and Calamari place the olive oil, peppers, garlic, shallot, thyme, cayenne, and salt in a large saucepan over low heat. Cover the pan and bring to a simmer. Adjust the heat so the oil is at a slow simmer and cook, turning the peppers in the oil from time to time, until very soft, about 15 minutes. Let cool, cover, and refrigerate. (The recipe can be made to this point up to 2 days ahead.)Stem the peppers and reheat them in their oil.
For the calamari, heat the oil in a 10-inch Nonstick Skillet over high heat until just smoking. Season the squid with salt, pepper, and cayenne. Place the squid in the skillet and saute until they turn white, about 1 1/2 minutes. Add the garlic, 1 tablespoon of parsley, and the lemon juice. Saute for 1 1/2 minutes more.
To serve, arrange 5 peppers in a circle around each of 4 large plates (reserving the oil), with the stem ends toward the center of the plate and leaving a 1-inch border between the peppers and the plate rim. Place the calamari in the center of the plate. Spoon the oil from the peppers in a circle outside the peppers. Drop a little balsamic vinegar over the oil. Reduce your salt intake by Alice
One of my friends asked me if I knew of any organic alternatives to table salt. This started me thinking carefully though I am a professional amateurish dietitian. Overuse of salt is really harmful to our health.
Definitely I am not a doctor so maybe I can not recommend how much exactly you should intake per day. I do believe, however, that a common sense, healthy diet will help with many of the symptoms, (like high blood pressure), that reduced salt intake is targeting. So if you intended to reduce salt intake, the effective way is to make some changes to your diet. Taking the advises of your doctor for taking blood pressure medication if you need and then talking to your doctor about diet changes. It would be very beneficial to do like that.
A certain level of salt in our diets is necessary to our health, but I think if you get start to eat high salt food, you eventually will acquire a higher than healthy taste for salt. I know, having done it myself, that you can re-educate your salt senses to desire less in your food. I did it by not only using less salt on food I was used to eating, but by eating less of the foods that I seemed to want salt on. Pasta was an example of this. I can't really enjoy traditional pasta dishes without more salt so I eat less pasta. I don't do this by cutting out pasta, but by only eating it combined with vegetables and sauces flavored with less salt as possible as I could. Sometimes my spaghetti looks more like soup than a normal spaghetti dish, but I was very happy to see like that. I felt good as long as I could be sure it is healthy food.
In my eyes salt has some strange uses in prepared foods. I have seen it listed on the labels of containers. I almost never drink soda, but surely there is a high sodium level on a soda bottle. Here is a smart way that to be a food label reader can help in controlling your salt intake. Probably you find, however, that simply reaching for the "low sodium" version of your favorite snack will work. Many of the traditionally high salt foods which now have low salt versions are not that pleasing to the taste. I think there are two reasons for this. Firstly those foods became high salt items precisely because they did not taste as good to most people without all the added salt. Secondly our taste buds become accustomed to a certain level of salt in our food and it takes a while to retrain them. Therefore, to get the benefits of reducing your salt intake, you need to go beyond label reading.
I would like to recommend something to you. If you need If you eat out often, many restaurants really use a lot of salt particularly the fast food may contain high levels of salt that you can not imagine. If you really want to reduce salt largely then do not have salt as an ingredient. Just remember that many foods are not always perfect without a little salt like dehydrated garlic or onion, parsley, basil, lemon peel, thyme, oregano, red pepper, citric acid, and freeze dried lemon.
The crucial way to help improving heath like lowering blood pressure is to change your diet in simple. Everyone has his or her own body type, so don't judge your health just by your weight now. If you need to lose weight, please improve your diet and dietary habits. When eating out ask for less added salt and think about your health goals before ordering. When eating at home, take the time to prepare meals that are more in line with your health goals.
