Baking question: I want to steam up my convection oven to make crusty bread. Would doing this destroy my oven?

The brand of oven I use is called "Smeg" and it has a green lcd screen in addition to the temperature and setting dials.

I was intending to put a tray of water at the bottom of the oven so that it can become steam when I put in the dough.

I have cooked a lot using this method. Honestly though, I don't think putting a pan of water at the bottom would be a good idea. #1- it takes too much heat to generate that much steam. #2-if you do generate enough heat it will probably be too much steam to create a nice, crusty loaf of bread. There is a fine line between steam for cooking nice bread and TOO MUCH steam. A nice trick I use is I keep a spray bottle of water by my oven; and I spray a few squirts in the oven just before I put the bread in. I know it doesn't seem like much water, but this all you need to create a hot steam inside the oven. (Have you ever had 1 strand of cheese fall to the bottom of the oven and it smokes up your entire house?- kind of the same theory here). You may even spray once more about halfway through the cooking process- just be sure to keep the door shut as much as possible to keep the steam inside. Oh, and adding water will in NO way damage your oven. Wipe it out at the end if you are worried about it. I hope this helps. Chef Joe- Let's Talk Chef.com
