Make this Banana Split Delight for a Special Dessert!

Treat your family and/or friends to a special dessert with this recipe for a Banana Split Delight.  From the Cookie Crumb Crust to the Homemade Chocolate Sauce, this recipe is sure to be a hit.  Like a traditional banana split, we top this yummy dessert with whipped cream, chopped nuts, and maraschino cherries.  Believe it or not, this dessert is even better than the traditional banana split!  Hard to believe?  Give it a try and see for yourself!  This is a great dessert to enjoy poolside or in front of the fireplace.  Either way, just be prepared to serve seconds!

BANANA SPLIT DELIGHT
SAUCE:
2 cups confectioners' sugar
1 can (12-oz) evaporated milk
1 stick butter
3/4 cup semisweet chocolate chips

In a medium saucepan, over medium-low heat, melt the butter; add sugar and stir to blend. Gradually stir in the evaporated milk while stirring. Add the chocolate chips and stir constantly while cooking for 8 minutes. Cool at least 45 minutes.

BASE:
2 1/2 cups approximately 24) creme-filled cookies, finely crushed
1/2 stick butter

In a large bowl, combine the cookie crumbs and butter. Mix well and press lightly onto the bottom of an ungreased 9 x 13 x 2-inch pan.

Filling:
3 medium bananas, thinly sliced
1/2 gallon vanilla ice cream, softened
1 can (8-oz) crushed pineapple, drained (use juice to dip bananas to prevent browning)

Arrange the sliced bananas over the cookie crumb crust. Spoon half of the ice cream over the bananas. Refrigerate remaining ice cream. Spoon half of the cooled chocolate sauce over the ice cream layer. Freeze until firm. Spoon remaining ice cream over the chocolate layer. Spoon the pineapple over the ice cream. Cover and freeze until firm.

TOPPING:
Frozen whipped topping, thawed
chopped pecans or peanuts, optional
maraschino cherries, optional

To serve, cut into squares and place on dessert plates. Drizzle remaining chocolate sauce over squares. Top with whipped topping, nuts, and cherries, if desired.

I need a a good fruit dessert with apples?

I am making a party tomorrow and there will be people with numerous food allergies present. I have a ton of apples to use and would love to make a sugar-free all fruit creative dessert with the apples...any suggestions (and I don't want to just put them on a plate)?

How about Apple Brownies with a Dallop of Whip Cream of Ice Cream. I like this dessert coz you can enjoy it as a breakfast OR dessert!

Apple Brownies

Here's what you will need to make it:

* 1 cup peeled, chopped apples

* 1/2 cup softened butter

* 1 cup sugar

* 1 egg

* 1 cup flour

* 1/2 teaspoon cinnamon

* 1/2 teaspoon baking powder

* large mixing bowl

* wooden spoon

* 9 x 13 inch baking pan, greased

* oven mitts

* knife

Here's what you have to do:

1. Be sure to wash your hands and check with a grown-up before you begin. You'll be using an oven for this recipe.

2. Preheat the oven to 350 degrees.

3. In a large mixing bowl mix 1/2 cup of butter that is softened or at room temperature with 1 cup of sugar.

4. Beat in 1 egg.

5. Add in 1 cup of flour a little bit at a time while you stir it into the butter mixture.

6. Add 1/2 teaspoon of cinnamon, and 1/2 teaspoon of baking powder.

7. Add 1 cup of peeled and chopped apples.

8. Pour mixture into a 9 x 13 inch baking pan greased with butter. Try to distribute the apples evenly around the pan.

9. Use oven mitts to put the baking pan into the oven. Bake the brownies at 350 degrees for 35 to 40 minutes.

10. Use oven mitts to take the brownies out of the oven and let them cool before cutting them into bars.

11. Serve with any flavored Ice Cream of Whipped Cream *optional* If desired, slice up some apples as a garnish.

Apple Bagel Sandwich

Here's what you will need to make it:

* 1 bagel sliced in half

* 8 apple slices (4 per half)

* cinnamon and sugar

* cream cheese (any flavor)

* spatula

* small bowl

* cookie sheet

1. Take the slices and place them on a cookie sheet

2. In a small bowl, mix the cinnamon and sugar into the cream cheese

3. Using a spatula, spread the cheese mixture onto the bagel slices and top with 4 slices of apples on each

Four healthy dessert alternatives   by Tom E. Pollock

The overwhelming desire children have for a sweet dessert after dinner can sometimes be a problem so I thought I'd write about some healthy dessert alternatives that work in our familyHaving spent plenty of time with my children's friends and their families I'm reasonably sure that the concept of dessert after dinner is something all children in our appreciate. Not every family has dessert after dinner on a regular basis, or does so in the same ways, but I think among the children, they all like it...sometimes too much. That's why it's good to have a few things up your sleeve that aren't so far on the "unhealthy" side of the spectrum:

Alternative dessert 1: Fruit and Cheese Plate - just like the European tradition, sometimes a little fresh fruit and cheese can make a great dessert without being unhealthy. One of the things I like best about this item is that the kids really like the involvement in creating a nice fruit and cheese plate: making designs out of fruit wedges and crackers, arranging cheeses, etc. Their involvement in the process makes them much more receptive to enjoying the "fruits" of their efforts.

Alternative Dessert 2: Fruit Crisp - very easy to make and you can even get the little ones to help out on this: measuring out dry ingredients, mixing up the topping, and (if they're old enough) cutting up the fruit. You can prep it before dinner with the kids - it only takes a few minutes - and when you are sitting down for dinner, have the kids throw it in the oven so it is ready when they are finished eating. There are a lot of good Fruit Crisp recipes out there, but here is one I like to use: Mary's Best Crisp

Alternative Dessert 3: Breakfast Cereal with Yogurt - I like this one because it feels kind of rebellious to be eating breakfast cereal in the evening. The fact is though, that some of those breakfast cereals really are like candy, but they make such an effort to enrich them with vitamins and minerals so they are actually a lot more healthy than your typical ice-cream or cookie type dessert. The thing I like to do with the "cereal for dessert" to distinguish it from the "cereal for breakfast" is to put yogurt in it instead of milk. A pre-mixed yogurt like raspberry has an added sweetness to it which makes the combination like a decadent ice-cream treat with a bit of a healthy upside.

While those three sweet treats are a bit healthier than some traditional desserts, we have spent considerable effort with our kids to convince them that dessert is a special thing that doesn't happen after every single dinner. Nonetheless, sometimes it is hard to get around the need to reward kids for good dining behavior such as sitting still, eating undesirable items, or displaying good manners. When we used to have to "play the dessert card", we since found a couple of alternatives that the kids like as much or more than a sweet treat and everyone benefits.

Alternative Dessert 4: Art Project - Even the most available parents find that there just isn't enough time in the day to do all the fun stuff with your kids that they (and you) want to. We've started using the missing dessert after dinner as a space in which to put a bit of creative play. Keep your ears open to the things the kids want to do and save them up for those times when you have a few extra minutes. I know from our kids there is a constant stream of project requests and only a few are ever approved. When the kids start saying "what's for dessert", it is great to be able to respond, "Well we don't actually have a dessert tonight, but how about such and such project that you wanted to do?" I've found the response to be pretty satisfying for all concerned.

Sweet things are just another part of the wide variety of foods we get to eat, but I think it is important to remember that dessert after dinner doesn't always need to be unhealthy, and is doesn't even need to be food. Once you open your childrens' minds to the idea that a special activity can be a "dessert" there are endless ways everybody can be healthier and happy about it.
