Anolon Cutlery? Yes, or No?

i am in the market for good cutlery...I currently have an Anolon 5 1/2 inch Santoku and LOVE it. Its the only knife i have and use. Is the is product good? I am looking for long term use...considering the 15pc. set is $179. I just love the balance of the knife and that its full tang, and hard german steel. I know Henkels is good and Wustoff too, but I'm not rich. Is Anolon up to par with the others or is it just below, but good enough?

I work in a high-end culinary supply store and, although we don't carry the Anolon cutlery line, I think that they appear to be a quality product line. I just looked them up online and read some descriptions of the product along with reviews and it seems like they're a pretty good buy for a quality product. Actually, they seem quite similar to the higher priced Henckel & Wusthof lines which I recommend highly.

The important factors are these: the steel is forged and not stamped and the blades are full-tang as you mentioned. The counter balance in the handle is a nice feature as well as it allows for more control. As long as the weight of the knives and the shape of the handles are comfortable for you then you may have found a great deal. Be sure to care for the knives properly once you have them in order to insure their longevity. Use your honing steel regularly (a few times a week) and don't put your knives in the dishwasher. The detergent & high heat will dull the blades and destroy the handles.

Another alternative if you don't think you need all 15 pieces in the Anolon set is to buy one or two higher-end knives at a time and build a collection of only the knives you're likely to use on a regular basis. A lot of sets contain knives that people never use, depending upon their style of cooking. So that's something to consider. Two good Wusthofs could be purchased for $179 and those, added to your Santoku, could be all you need. But if you really think that you'll get a lot of use out of the 15 pieces in the set, by all means go that direction.

Either way, it looks like you'll have lovely knives to use for years to come.
